Freezer friendly apple cinnamon roll ups

I have no sweet tooth, however sometimes I just get a MASSIVE craving for something covered in sugar. These mini pastries are great for satisfying this urge, using up some old apples, and they can be made and kept in the freezer for a good-to-go snack. If you want to tart it up a bit, just add a little ice cream & toffee sauce when they are fresh out the oven!

This recipe calls for premade pastry - do not judge. Have you ever tried to make your own puff pastry?! It's messy, fiddly and never tastes as good. I don't know about you but I have some important procrastinating to do and simply don't have the time for that bollocks.

Ingredients

1 sheet of premade puff pastry

2 small apples

50g butter

1 teaspoon cinnamon

1 tablespoon soft brown sugar

Optional

1 handful of walnuts

squeezy toffee sauce

ice cream - vanilla or salted caramel are the best!

Method

  • Make sure your pastry is room temperature and roll it out flat

  • Pre-heat your oven to 180

  • Melt the butter (30secs in the microwave should do it)

  • Add the cinnamon to the butter and use a pastry brush to spread it over your pastry

  • Slice the apples – the skin can stay on but just make sure you remove all the core

  • Sprinkle the sugar over the pastry

  • Add a line of apples to one end and start roll the pastry just enough to cover that line, then add another line and roll that over. Repeat this until you have used all your apples and your pastry is all rolled into a ‘log’

  • Cut your rolled pastry into sections of about 1 inch thick and evenly distribute over a sheet pan lined with greaseproof paper (you can use the paper that comes with the pastry if it is still intact)

  • Put in the oven for 20-25 mins, take out when golden - don't overdo it or all the pastry with be too dry.

Once taken out you can either simply drizzle with icing or consume immediately with copious amounts of ice cream, walnuts and toffee sauce.
